Instructions
Prepare the Meat Filling
- In a cast iron skillet or another oven-safe skillet, add ground beef, mixed veggies, and seasonings. Cook until well incorporated. You can use all fresh ingredients for this easy recipe, or all shelf-stable ingredients like canned, dehydrated, and freeze-dried, or a combination of both. When done with this step you want these ingredients to be fully cooked and hydrated. Shelf Stable Ingredients: Add ground beef, vegetables, seasonings, and hot water to the cast iron skillet. When adding the water, add enough to fully submerge the ingredients. Over medium-high heat bring to a boil, then reduce to medium heat and simmer for about 10-12 minutes or until most of the water has been absorbed and/or evaporated. Note: While this simmers, I prepare the instant mashed potatoes. Fresh Ingredients: On medium-high heat, brown ground beef. Drain fat drippings. Add mixed vegetables and seasonings and continue cooking for 2 minutes.
- Add the flour to the meat mixture.
- Add the premixed brown gravy. Cook for 1-2 minutes or until thickened.
- Taste and adjust seasoning as needed. Remove from heat.
Prepare the Instant Mashed Potatoes (while the meat sauce simmers)
- Prepare the instant mashed potatoes according to the package. (Note: some instant mashed potatoes, like creamy mashed potatoes, have butter and salt in them but some don't. If your instant mashed potatoes don't, follow the package directions by adding the butter and salt.)
Assemble
- Set oven to High Broil (550 degrees).
- Carefully spread warm mashed potatoes on top of the meat sauce, in the oven-save skillet.Note: If your skillet isn't oven-safe, transfer the meat sauce to a 9 x 9 casserole dish.
Broil
- Broil for about 5 minutes, on the bottom rack of the oven. Watch closely since the potatoes will go from perfectly browned to burned quickly.
