When I started thinking of recipes to stock in my long-term food storage, a beef stroganoff recipe with mushroom soup was one of the first recipes that came to mind. My only concern was finding a shelf-stable version of sour cream. Well, I found it on Amazon (no luck at the grocery store). I absolutely loved this recipe and discovered I could have this meal on my table in the amount of time it takes to cook the pasta. I loved the recipe enough that I proceeded to make my own freeze-dried sour cream.

For a new weeknight dish, follow the instructions below by making this easy recipe in mason jars for a short-cut meal. Your creamy beef stroganoff sauce will be ready in about 10 minutes. You can purchase freeze-dried ground beef “beef crumbles” from food storage vendors or if you have access to a freeze-drier I recommend making your own. When I made this recipe the first time, with homemade freeze-dried ground beef, I was shocked at how I couldn’t tell the ground beef wasn’t fresh. This is such an easy beef stroganoff recipe and is now a family favorite.
Ingredient Substitutions & Tips

Ground beef – You can purchase beef crumbles as pictured above from various food storage companies, but if you have access to a home freeze drier, I prefer making my own freeze-dried ground beef.
Egg Noodles – My own spin for a low-carb meal, beef mushroom stroganoff served over spaghetti squash makes for a nice low-carb meal. If you prefer rice over pasta, you can also serve this creamy sauce over rice. Make your own version of this recipe by choosing your favorite paring to serve the beef stroganoff sauce on.
Spaghetti Squash Tip – you may be wondering just how shelf-stable spaghetti squash is. I keep my spaghetti squash in a cold storage room. I simply set them directly on the cement floor. They have lasted 11 months for me.
Mason Jar Beef Stroganoff Mix

Add ingredients to the mason jar in the following order:
1) Add seasonings and mix to the mason jar.
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
2) Layer each of the following ingredients one at a time.
- 2/3 cup freeze-dried sour cream
- 2 tablespoons powdered milk
- 2 tablespoons dehydrated minced onion
- 3 cups freeze-dried cooked ground beef
Proper Storage: Add an oxygen absorber to the mason jar with a new clean lid and ring to create an airtight container with no oxygen. Store in a cool dark place for the longest shelf life.

Beef Stroganoff Recipe with Mushroom Soup: Pantry Meal
Ingredients
- MASON JAR MIX INGREDIENTS:
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
- ⅔ cup freeze-dried sour cream
- 2 tablespoons powdered milk
- 2 tablespoons minced onion
- 3 cups freeze-dried cooked ground beef
- REMAINING SHELF-STABLE INGREDIENTS:
- ¼ cup white wine
- 1 tablespoon Worcestershire sauce
- 2 cup beef broth
- 1-7 ounce can mushrooms drained
- 1-10 ¾ ounce can cream of mushroom soup
- 1-8 ounce bag egg noodles cooked
- 1 small spaghetti squash cooked (optional, low-carb option)
Instructions
- Start a pot of water, on high heat, to cook egg noodles. Complete the process of cooking the pasta, according to package instructions, while following the remaining steps to make the beef stroganoff. If you are making spaghetti squash, for a low-carb option, start that now. I cook my spaghetti squash in a pressure cooker set on high for 4 minutes.
- In a large skillet, add beef broth (or beef stock), Worcestershire sauce, and white wine (can substitute additional beef broth for wine). Bring liquids to a boil over medium-high heat. Add mason jar mix ingredients. Simmer for 3 minutes or until the beef is fully rehydrated.
- Reduce to medium heat. Add the mushrooms and the cream of mushroom soup to the meat mixture. Combine well and simmer for 2-3 minutes.
- Serve over egg noodles, rice, or spaghetti squash.
